How about a two-day board game? The "version" Spencer was playing was not the "real" rules as Katie found out so we had to learn the strategy for the game of Risk. We played in between sessions of conference. Katie won.

In high school,when I would go on those weekend Speech and Debate tournaments, the guys would play an ongoing game. In between judging etc. You can play that game for a week you know! Totally involved. You should get settlers of catan! I played it with bec and phil and its way cool! Total strategy game. Spencer would love it.
